A proposal where cheese takes centre stage, accompanied by pairings that balance textures, aromas and intensity.<\/p>\n<h3 data-start=\"3784\" data-end=\"3811\"><strong data-start=\"3788\" data-end=\"3811\">Odre \u2013 Sheep\u2019s Milk<\/strong><\/h3>\n<p data-start=\"3813\" data-end=\"4142\">An artisanal Catalan sheep\u2019s milk cheese with soft maturation and a fine, silky white rind. It offers a creamy, unctuous texture with aromas of wood and humidity, alongside lactic notes that evolve throughout the year. On the palate it is balanced, with medium acidity, hints of raw nuts and a slightly bitter, persistent finish.<\/p>\n<p data-start=\"4144\" data-end=\"4358\"><strong data-start=\"4144\" data-end=\"4156\">Pairing:<\/strong> Bouquet d\u2019Alella Pansa Blanca<br data-start=\"4186\" data-end=\"4189\" \/>Its freshness and acidity cleanse the creaminess of the cheese, while floral and fruity notes complement its gentle maturity, creating a delicate and refined experience.<\/p>\n<h3 data-start=\"4365\" data-end=\"4406\"><strong data-start=\"4369\" data-end=\"4406\">Pil\u00f3s \u2013 Raw Cow\u2019s Milk (Ripoll\u00e8s)<\/strong><\/h3>\n<p data-start=\"4408\" data-end=\"4693\">Made from raw Friesian cow\u2019s milk, this is a cooked-curd cheese with a washed rind, aged for a minimum of three months. Flexible and creamy in texture, it reveals buttery and toasted aromas with a subtle spicy finish. Its persistence reflects the landscape and tradition of its origin.<\/p>\n<p data-start=\"4695\" data-end=\"4847\"><strong data-start=\"4695\" data-end=\"4707\">Pairing:<\/strong> Bouquet d\u2019Alella Blanc+<br data-start=\"4731\" data-end=\"4734\" \/>Oak ageing brings creaminess and lightly smoky notes that enhance the character of Pil\u00f3s without overpowering it.<\/p>\n<h3 data-start=\"4854\" data-end=\"4895\"><strong data-start=\"4858\" data-end=\"4895\">Reserva del Castell \u2013 Goat\u2019s Milk<\/strong><\/h3>\n<p data-start=\"4897\" data-end=\"5096\">Pressed goat\u2019s milk cheese with a natural rind, aged between 6 and 7 months. Intense, with aromas of toasted nuts, toffee and dark chocolate. Initially dry, finishing creamy, slightly spicy and deep.<\/p>\n<p data-start=\"5098\" data-end=\"5268\"><strong data-start=\"5098\" data-end=\"5110\">Pairing:<\/strong> Bouquet d\u2019Alella Plaer Sparkling<br data-start=\"5143\" data-end=\"5146\" \/>Its extended ageing and citrus, brioche and pastry notes harmonise beautifully with the cheese\u2019s intensity and complexity.<\/p>\n<h3 data-start=\"5275\" data-end=\"5305\"><strong data-start=\"5279\" data-end=\"5305\">Glauc \u2013 Raw Cow\u2019s Milk<\/strong><\/h3>\n<p data-start=\"5307\" data-end=\"5532\">Artisanal blue cheese made from raw cow\u2019s milk. Very creamy paste with blue veins of Penicillium, silky texture and melting mouthfeel. Intense yet balanced, with a characteristic spicy touch and a subtle sweet, fruity finish.<\/p>\n<p data-start=\"5534\" data-end=\"5719\"><strong data-start=\"5534\" data-end=\"5546\">Pairing:<\/strong> Bouquet d\u2019Alella Syrah<br data-start=\"5569\" data-end=\"5572\" \/>The wine\u2019s fruity intensity, tannins and barrel ageing balance the depth and creaminess of Glauc, resulting in a classic and sophisticated pairing.<\/p>\n<h2 data-start=\"5726\" data-end=\"5755\">Jams: contrast and balance<\/h2>\n<p data-start=\"5757\" data-end=\"6042\">The proposal is completed with artisanal jams from Melmel\u00e0ria (Tiana), made with seasonal and locally sourced fruit and vegetables, mainly from the Maresme region.
