Manual harvest in 15 kg boxes and a strict selection of grapes. The grapes are then refrigerated in a cold room for a few hours to obtain aromatic precursors. Then it is pressed gently using only the first must. Static mudslide. Alcoholic fermentation at a controlled temperature of 15\u00baC in stainless steel tanks for 3 weeks (each variety separately). And finally, the second fermentation is done in the bottle following the traditional method of production and a minimum of 18 months of aging with its lees with the subsequent manual disgorging without the addition of any liqueur.<\/p>\n<p>&nbsp;<\/p>\n<p>Brut Nature sparkling white wine made with 66% Pansa Blanca and 33% Chardonnay. Production is limited, 3384bottles.
