Catalan Cheeses with Identity: From the Producer to the Table

At Bouquet d’Alella we are committed to origin-driven products, craftsmanship and close relationships with our producers. Our selection of Catalan cheeses highlights projects that work with respect for the land, raw materials and traditional processes.

Each cheese tells a story — of its landscape, its herd and the hands that craft it. A proposal where cheese takes centre stage, accompanied by pairings that balance textures, aromas and intensity.

Odre – Sheep’s Milk

An artisanal Catalan sheep’s milk cheese with soft maturation and a fine, silky white rind. It offers a creamy, unctuous texture with aromas of wood and humidity, alongside lactic notes that evolve throughout the year. On the palate it is balanced, with medium acidity, hints of raw nuts and a slightly bitter, persistent finish.

Pairing: Bouquet d’Alella Pansa Blanca
Its freshness and acidity cleanse the creaminess of the cheese, while floral and fruity notes complement its gentle maturity, creating a delicate and refined experience.

Pilós – Raw Cow’s Milk (Ripollès)

Made from raw Friesian cow’s milk, this is a cooked-curd cheese with a washed rind, aged for a minimum of three months. Flexible and creamy in texture, it reveals buttery and toasted aromas with a subtle spicy finish. Its persistence reflects the landscape and tradition of its origin.

Pairing: Bouquet d’Alella Blanc+
Oak ageing brings creaminess and lightly smoky notes that enhance the character of Pilós without overpowering it.

Reserva del Castell – Goat’s Milk

Pressed goat’s milk cheese with a natural rind, aged between 6 and 7 months. Intense, with aromas of toasted nuts, toffee and dark chocolate. Initially dry, finishing creamy, slightly spicy and deep.

Pairing: Bouquet d’Alella Plaer Sparkling
Its extended ageing and citrus, brioche and pastry notes harmonise beautifully with the cheese’s intensity and complexity.

Glauc – Raw Cow’s Milk

Artisanal blue cheese made from raw cow’s milk. Very creamy paste with blue veins of Penicillium, silky texture and melting mouthfeel. Intense yet balanced, with a characteristic spicy touch and a subtle sweet, fruity finish.

Pairing: Bouquet d’Alella Syrah
The wine’s fruity intensity, tannins and barrel ageing balance the depth and creaminess of Glauc, resulting in a classic and sophisticated pairing.

Jams: contrast and balance

The proposal is completed with artisanal jams from Melmelària (Tiana), made with seasonal and locally sourced fruit and vegetables, mainly from the Maresme region. Each recipe adds contrast, sweetness and acidity, enriching the cheese experience with complementary aromas and textures.
