Wine from organic farming. Manual harvesting in 15 kg boxes and strict selection of grapes in the vineyard. The grapes are cooled in a cold room for a few hours to obtain aromatic precursors. Soft pressing with the exclusive use of flower must, a static demist and an alcoholic fermentation with the vine’s own yeasts. at a controlled temperature of 15ºC in stainless tanks for 3 weeks. Aging on its lees for 5 months doing battonage.
Calm white wine made with the quintessential autochthonous variety of the area, 100% white raisins from the winery’s most emblematic vineyards, those of La Vall de Rials. The production is limited, 1500 bottles. And its alcoholic strength is 12% vol.
To the eye it is clean and bright; pale yellow, very clear and transparent with certain greenish reflections.
The nose is subtle, frank and fruity; typical of the variety, the aromas of white fruit (water pear or vine peach) stand out with light fresh and Mediterranean herbal notes.
In the mouth it is unctuous, glyceric, elegant and a mineral point. With moderate acidity, we recognize white fruit again on the palate. You can also guess the influence of saulón and the Mediterranean coastal lands with a very balanced point of salt and partly masked by a buttery background, long and pleasant. A fresh wine but with body and the maturity of the vine where the fruit is born.
Pairs well with fish dishes, white meats, rice and vegetables. We recommend serving it between 8 and 10 ºC
