Wine made from organic vineyards. Manual harvest in 15 kg boxes and a strict selection of grapes. The grapes are then refrigerated in a cold room for a few hours to obtain aromatic precursors. Then it is pressed gently using only the first must. Static mudslide. Alcoholic fermentation at a controlled temperature of 15ºC in stainless steel tanks for 3 weeks (each variety separately). And finally, the second fermentation is done in the bottle following the traditional method of production and a minimum of 30 months of aging with its lees with the subsequent manual disgorging without the addition of any liqueur.
