Veraison is one of the most beautiful stages in the vineyard. The grapes begin their transformation in colour. Until now, every bunch has contained a high concentration of chlorophyll in the skins, allowing the fruit to carry out photosynthesis, grow, and display the same green colour as the leaves.
Once growth is complete, the bunches begin to ripen. The chlorophyll fades away, and the identity of each grape variety starts to reveal itself.
The sun and the Sauló continue to contribute to the development of flavours in the pulp, as well as colour and tannins in the skins.
The white varieties become translucent and golden. Our Pansa Blanca even blushes, revealing a delicate hint of pink on some bunches.
The red varieties begin to produce natural pigments that accumulate in the skins: anthocyanins. These are responsible for the spectacular display of colours, ranging from bright red, crimson, and bluish violet to deep purple and the richness of dark blue. This chromatic celebration can be observed within a single bunch, where each berry reflects its own journey—its flowering, pollination, and the amount of sunshine or shade it has received each day in the vineyard.
This mosaic of colours lasts only a couple of weeks at Bouquet d’Alella. Veraison never lies; these are the colours of the journey the grapes have taken.
Ripening continues. Sunlight and temperature keep activating the unique genetics of each variety. The vineyard fills with personality, and the bunches gradually develop their characteristic colour and distinctive aromas.
