Wine from organic farming. Manual harvesting in 15 kg boxes and strict selection of grapes in the vineyard. The grapes are cooled in a cold chamber for a few hours to obtain aromatic precursors. This is followed by a pre-fermentative pellicle maceration in white Grenache to enhance the primary aromas. And then each variety separately undergoes a gentle pressing using exclusively the flower must, a static demist and an alcoholic fermentation at a controlled temperature of 15ºC in oak barrels for 3 weeks (each variety separately). Aging on its lees for 3 months making batonage in the same boot.
Calm white wine made with the native varieties of the area, specifically 66% Pansa Blanca and 34% Garnatxa Blanca. Production is limited, 2300 bottles. And its alcoholic strength is 12% vol.
At sight it has a bright yellow color with golden tones.
On the nose we find aromatic maturity with soft touches of aging. Aromas of sweet ripe white fruit with soft hints of vanilla, butter…
In the mouth it has a frank attack, wide mouth passage and very persistent aftertaste. Balanced acidity. Ripe fruit flavors combined with boot sensations.
Pairs well with seafood, fried rice, mushroom risotto, fish and meat with xup-xup, cheeses such as brie or camembert. We recommend serving it between 10ºC and 12ºC
